In this role as Senior Scientist Food Application (Bakery), you will be focusing on supporting the baking business with expertise on food, and especially baking, applications, having an overview of the various baked products, the ingredient interactions during the overall process and their relevance for product quality. This with the idea to look for new solutions to challenges their customers are faced with, such as egg replacement, cleaner label products, improved healthiness, plant-protein based baking etc. You will work in close collaboration with the business and analysis counterparts, as well as with external parties active in the field of interest.

Your daily work will be composed of:

  • Giving guidance to practical work in the food lab
  • Active contributions in projects to develop new products for the baking market
  • Using your expertise to give support to questions from the business and those arising from the market
  • Translating your insights, knowledge and know-how to non-scientists
  • Working closely together with technicians and scientists active in the field of baking, with the innovation manager and with product application experts and technical service managers
  • Working in multidisciplinary project teams with Application, Fermentation and Down-Stream Processing, Analysis, IP, Regulatory and BioIT experts, to create new and/or improve existing DSM products 
  • You will be part of a central research unit of the Food & Beverages business unit where taste, texture and nutrition are the strategic drivers
  • You will join the Enzyme House, part of the CFI at DBC
  • You will need to understand the products and processes of customers while being able to include external complementary solutions
  • You are expected to actively participate in expanding DSM solutions!

The perfect candidate for this role should meet the following criteria: 

  • Master or PhD degree or comparable level in the field of food chemistry or equivalent, preferably with several years of experience working in the field of baking (or solid foods)
  • You have experience in food engineering: improving functionalities by a good understanding of the application requirements and food matrix (understanding process–structure-properties relationships)
  • You have a strong affinity towards realistic solutions and application
  • You are able to work on multiple projects
  • You can apply your scientific knowledge and expertise in providing practical and/or create innovative solutions while being able to clearly present the added value of your contributions
  • The organisation expects you to be a team player eager to connect to fellow professionals in the various scientific competence areas within DSM as well as to those from external parties
  • You have a customer focus and you are open to sharing knowledge with your colleagues
  • Your personality can be described as collaborative, entrepreneurial, pro-active, responsible, result-driven and flexible
  • Good communication skills in English are required
